Maddie Finnegan
Maddie Finnegan is a true trailblazer in the cocktail scene and has helped lead Green Lady Cocktail Room since the its opening. In 2023, Maddie was honored with the Bar Czar People's Choice Award and returned as a judge. Her current role at Green Lady Cocktail Room contributed to the venue winning the Indie Lodging Congress's award for “Best Hotel Bar.” Maddie’s meticulous creativity and heartfelt dedication continue to set new standards for the cocktail industry in Hawaii and beyond.
Bringing experience from bar programs at Podmore in Honolulu, as well as Django and The Bartender's Handshake in Des Moines, Maddie has consistently impressed competition judges and patrons alike. Guided by industry mentor Brett Adam’s of Multnomah Whiskey Library, she’s developed a deep expertise and innovative flair.
Off the clock, Maddie is always up for a karaoke night, paired with a Natty Light & shot of Braulio.
Dempsey Rouiger
Dempsey Rouiger, who originally hails from Brooklyn, came to Hawaii and began his career working at the island's best cocktail bars.
Dempsey is a dynamic force in the cocktail world, having honed his skills at The Whisk(e)y, Podmore, and The Marmot. Now serving as Green Lady Cocktail Room’s most enthusiastic ambassador, Dempsey brings an infectious energy to every aspect of the bar.
In addition to cocktails, he is passionate about curating event programming that perfectly complements the bar's atmosphere, ensuring an unforgettable experience for guests. Dempsey’s dedication to blending exceptional cocktails with carefully crafted live music experiences makes him an invaluable part of our team.

Maynard Torigoe
Maynard Torigoe, who hails from Tokyo, Japan, brings a wealth of experience and a deep appreciation for hospitality to our team.
Starting his career in Tokyo, Maynard made his way to Hawaii, where he quickly became known for his meticulous attention to detail and warm, welcoming demeanor. As a server and barback, Maynard is a cornerstone of our bar's operations, seamlessly supporting the team and ensuring everything runs smoothly behind the scenes.
His dedication to creating memorable guest experiences (and tending to the occasional mess) makes him an invaluable member of our team.
